The Hamilton Farmers Market was held from 3-6 p.m. Thursday, June 23. There were six tables set up, and one of the unique additions to the Hamilton scene was Farmsteading and More, featuring Jacqueline and Chris Corvaia’s gourmet mushrooms.

The Corvaias reside in Hamilton and specialize in growing the gourmet varieties of mushrooms. They raise and sell mushrooms with intriguing names like blue oyster, brown oyster, lion’s mane, king oyster, and elm oyster, each of which has different characteristics and can be used in many ways. They will also be offering shitake and enoke mushrooms in the future.

On Thursday, they had Mediterranean brown oysters and lion’s mane mushrooms with them. The Corvaias said the brown oysters have an especially creamy texture and are “excellent in gravies and stir-fry and slow cooker meals.” The lion’s mane are white and are an excellent substitute for seafood, with lion’s mane “crab cakes” being an excellent use for them, according to Jacqueline. Chris emphasized in an email message that it can be steeped as a tea, and that it has “really good medicinal qualities, can protect against dementia, may speed the recovery of nervous system injuries, and may relieve anxiety in some people when consumed. There are many studies going on, on the major health benefits of this mushroom.”

Their getting into mushroom farming was the result of being intrigued by mushrooms and mushroom hunting. “We were inspired by a grow-your-own mushroom kit that then caused us to dive into the rabbit hole of research on how to grow-your-own from start to finish.” They were inspired by their research and found the information fascinating. “We decided to try it ourselves with the lion’s mane mushroom and, after several trials, we became successful, and from there we grew our library of different varieties of mushrooms that we have today.”

Growing mushrooms for sale seems complicated to the average observer, and even after their explanation it might still remain a mystery. “We start off in the lab and from there we move the mycelium, which is the root-like structure, to a nutritious substrate that is primarily sawdust based,” they continued. “Once it is fully colonized, we move it onto our grow room, which is a controlled environment to simulate a natural season change in its environment. From there we cause it to fruit and grow out for everybody’s enjoyment/human consumption.”

Their gourmet mushrooms sell for $12 per pound or $8 for one half pound, and custom orders are also available. They are also open year round and take orders and offer delivery for certain quantities.
