With sparkling turkey, creamy mashed potatoes, sausage stuffing and cream pies, Thanksgiving is not a completely vegetarian holiday.

At least not. Today, there are many restaurants, bakeries and catering companies in northern New Jersey that can provide full feasts (or just a few sides) to meet the dietary restrictions of vegetarian guests and satisfy their taste buds.

These stores will send you home, filled with Thanksgiving food, without any animal by-products.

Busy Bee Organics, a catering supplier based in Jersey City, offers a "everything but turkey" menu. Every dish is gluten-free, and many are vegetarian. Options include a hearty lentil shepherd's pie ($18.95); mushroom gravy ($9.95); butternut squash macaroni and "cheese" ($16.95); and chopped sweet potatoes with maple pecans ($18.95).

Don’t forget the desserts: fluffy tiramisu pie ($21.95), pumpkin cheesecake ($28), apple crumble pie ($18.95)-even eggnog ($8) and s'mores hot cocoa buns ( 15.95 USD).

The subscription period is from Friday to Sunday every week. Busy Bee delivers to Jersey City, Hoboken, Union City and Weehawken from 5 to 8 pm on Monday. Alternatively, you can pick up the goods from one of the locations in Jersey City.

Freakin' Vegan specializes in "vegetarian junk food," said the owner, Kurt Biroc. Popular dishes include Buffalo Chicken Pizza ($29 for a large one), BBQ Pork-Free Sliders ($16) and Meatballs Palm Submarine ($16)-all of which are made with meat and cheese substitutes of. However, the restaurant’s best-selling dish is the decadent buffalo chicken macaroni cheese-elbow noodle pasta soaked in vegan cheese, piled with buffalo chicken and topped with vegan blue cheese. Are these dishes usually served on Thanksgiving? Do not. However, Turkey Day is all about comfort.

Biroc said that almost everything is made in-house, including seitan, all cheeses and many imitation meats, although Biroc admitted to using Beyond sausages. "It's great," he said. "To be honest, we can't do better ourselves."

Marisa Fucci, owner of the vegetarian company Green Cart Catering, and her husband John made their menu inspired by the original Thanksgiving feast.

"Native Americans made a lot of great dishes," Marissa said. "We thought, let's gather these people together for the holidays."

These modern interpretations of traditional American meals include corn and potato chowder; cranberry wild rice salad; warm quinoa with sweet potatoes and green apples; sukotas with lima beans and corn; three sisters Stew, a traditional Native American dish with beans, corn, and pumpkin.

"The Three Sisters Stew is the most popular," Marissa said. "I also make it at home. My family loves it."

Marissa started out as a literature teacher and will work in restaurants all summer. When she was growing up, her father also ran a restaurant. John has dining experience. Therefore, the couple decided to jointly open a vegan catering company in Newton, with Marisa (vegetarian) in charge of all the cooking work.

The soup is $25 per quart. Salads cost $50 for a half plate and $90 for a plate. The side of the half-market is $60, and the full-market is $90. Chefs Tere Fox and Luis Salgado, who once owned Rockin' Raw restaurant in Brooklyn, now operate an online vegetarian service of the same name in Jersey City. On Thanksgiving, Rockin' Raw offers a shepherd's pie with portobello gravy and vegetable meat ($13); spinach tofu lasagna ($60); acorn squash and walnuts stuffed with garlic herb quinoa Pumpkin ($15); and more.

Fox and Salgado's bakery Jam Cakery serves vegetarian desserts. Pies range from pumpkin marshmallows to apple peaches to s'mores ($35 to $45). More cake people? Try cranberry apple crumble cake or German chocolate or toffee pudding cake ($40-55). Why not add some hemp fudge brownies (6 for $18) or cider and chocolate donuts (6 for $14)?

"All items are vegan and made by vegans," Fox said. "We use only the best local organic ingredients as much as possible, and never use white sugar in our desserts."

Organic cane sugar and raw agave are used as sweeteners. Most of Jam Cakery's snacks are also free of gluten, soy and nuts. The deadline for orders is November 22.
