Rakkan Ramen will open its first Orange County location on Monday, Aug. 29 at The District at Tustin Legacy shopping center. The ramen shop will serve 100 bowls of free ramen to celebrate, with the first 50 customers at 11 a.m. and the first 50 customers at 5 p.m. receiving complimentary bowls of ramen.

Rakkan Ramen started with a four-seat counter in the Nishi-Azabu district of Tokyo. Founded in 2011 by chef Ryohei Ito, it has expanded in the past decade with seven locations in Japan and several more in the United States, including downtown Los Angeles, Redondo Beach and Long Beach.

What sets the restaurant apart is its umami-laden, plant-based broth made with kombu dashi, onion, shiitake mushrooms, ginger, carrots and garlic. Vegetable and gluten-free noodles are offered in addition to vegan versions of sushi rolls, crispy gyoza and steamed buns with shiitake mushrooms, fried onions and sesame. Other broth styles such as shio, soy and miso topped with charred chashu pork are served as well.

When Ito opened Rakkan Ramen, he sought to bring authentic flavors of Japan to the world. His venture was inspired after traveling as a chef on a cruise ship called the Peace Boat, a global non-government organization based in Japan that promotes environmental protection, sustainable development, human rights and peace. Throughout his travels, Ito absorbed the flavors in his cooking. Ito’s ramen grew a following that has since allowed him to franchise the ramen shop with locations slated to open in Las Vegas and other parts of California.
